Chicken Soup

Today is a rainy day here in Athens and as such, I thought I give the recipe of a soup. This recipe was given to me by a friend's friend when I visited United States for the first time. It was like almost 20 years ago and I and my then boyfriend were visiting his best friend who lived and worked in Washington D.C. He was staying in an appartment with his girlfriend and he was kind enough to let us stay for Christmas holidays. Anyway, for me it was a totally new experience, since I have never been to the States before. At that time there were many differences between the way we lived in Greece and the american way of living. I had a great time there, I visited all the museums and Georgetown. It was fun and also I had the chance to get this beautiful recipe from Estefan's girlfriend. It is a great soup and when you start, trust me, you can eat the whole saucepan. Anyway, let's make it.

Chicken Soup

Ingredients
1 lt chicken broth
1 lt water
2 chicken breasts skin on
2 bayleaves
3 tbsp parsley
1 1/2 tsp thyme
5 peppercorns
salt
1 cup celery chopped
1 large onion
2 carrots
1 bag rice noodles or any other noodles
Directions
We empty broth in the pot we add the chicken and the water. we bring to boil and skim off the yuck that comes to top. We put in the spices and the vegetables. We lower the fire and cover until the chicken and the vegetables are soft. We take out the chicken and remove the bones and skin and cut it in small pieces. in the meantime we have already prepared the noodles and throw them in in along with the chicken. It is then ready to be eaten. If it is too much you can always put it in the fridge and eat it another day after you heat it. Kali orexi(bon appetit).
