
I know it has been a while since my last entry but we were sick again. I do not know what has happened this winter but it seems that viruses become stronger and more every year. Since Christmas we get sick every week. At the moment I have a cold that torments my body but I will survive. In the meantime I have a recipe for you, it is easy and very tasty. Since I am sick I do not have the strength or the will to stay in the kitchen for hours. So let's go and make this chicken. By the way it is not adapted from anywhere, it is an inspiration of the moment.
Chicken with peppers in brandy sauce
Ingredients
700gr. chicken breasts without the skin cut in pieces or strips
1 can Campbell's Cream of Chicken and Wine condensed soup
1/2 cup milk
1/3 cup brandy
2 handfuls peppers cut in strips(I used frozen ones already cut)
1 small can mushrooms about 200 gr. ( you can use fresh if you have them)
salt, pinch of dried basil, pinch of dried oregano, pinch of nutmeg
1 onion
pinch of garlic
2 handfuls of yellow cheese anything you have at home
Directions
We chop the onion. In a skillet we put like 3 to 4 tbsp olive oil and sautee the onion the peppers and mushrooms. After five minutes we throw the chicken and when it starts becoming gold we throw the brandy. After a few minutes and when the amount of brandy has reduced we throw the soup dissolved in the 1/2 cup of milk. Put the salt, basil, oregano, nutmeg and garlic. We live it at low heat for half an hour. in the end we throw the yellow cheese. In case the sauce is a bit watery you can dissolve 1 tbsp corn flour in 1/4 cup water and add it. Good luck
