
Today for us greek Orthodox is "Clean Monday". From this day on starts the big lent for forty days until Easter Saturday when Christ resurrects. It is called clean Monday because wousewives used to clean their saucepans so as to be ready for the lent. From today many people do not eat meat or any of its byproducts and as we get closer to Holy Week the lent becomes stricter. I do not fasten, at least not until Holy Week. But today it is a custom even for those who do not follow this lent period to eat products of the sea(except fish) and legume. Yesterday I made this salad which is very nice, light and healthy. You can eat it alone or as part of a full course meal. It is easy and it is even better during summer because is cold. Let's do it then.
Bean Salad
Ingredients
1 cup beans
2 green peppers diced
3 red florina peppers ( they are already broiled and peeled and sold in a bottle with vinegar) diced
2 cucumbers diced
10 olives cut in pieces
5 cucumber pickle cut in pieces
1 can corn
Directions
Boil the beans until they are soft. Let them cool and then mix everything and store it in the fridge for couple of hours.
Dressing
Ingredients
10 tbsp olive oil
4 tbsp balsamico
1 tbsp mustard
2 tbsp honey
salt, pepper
Directions
Mix everything together and store it for at least couple of hours in the fridge.
After two hours mix the salad with the dressing and is ready. Be careful with the dressing as the quantity I am giving here is plenty. Do not use it all in one salad.
