Carrot Cake

As I have told you in previous posts, I always try to find recipes for sweets with quantities that do not last forever. I prefer to make sweets that can be consumed within two to three days. As I was surfing the internet I came across this recipe for carrot cake on BBC's Good Food and I really liked the idea of making it. So, when I returned back home I immediately put my plan in action. With some slight alterations I followed the recipe and the result was excellent. It is a very easy recipe apart from grating the carrots, nevertheless it worth the trouble. Here is the recipe.
Carrot Cake
Ingredients
175 gr. sugar
175 gr. maize oil
3 large eggs lightly beaten
150 gr. grated carrots
60 gr. raisins
zest of 1 large orange
175 gr. self-raising flour
1 tsp bicarbonate of soda
1 tsp ground cinnamon
1/2 tsp grated nutmeg
For the Frosting
80 gr. caster sugar
1 1/2 tbsp orange juice
Directions
Preheat oven to 180 degrees Celcius. Oil and line the base and sides of an 18 cm square cake tin with baking parchment. Throw the sugar and oil in the mixer's bowl and add the eggs. Mix until they incorporate. Stir in the grated carrots, raisins and orange zest.
Mix the flour, soda and spices and sift them to the bowl. When they are incorporated stop mixing. The mixture will be fairly soft and almost runny. Pour the mixture into the tin and bake for 40 to 45 minutes. Let it cool for 5 minutes, take out of the tin and peel off the paper . Beat together the frosting ingredients and drizzle it on top.
