
Now that Christmas Eve and Christmas Day are approaching, many of you will have friends and family for dinner or lunch. Here in Greece during Christmas Day we eat turkey stuffed with rice and chestnuts. Many people, though, do not like the turkey, so I am giving you an alternative or another festive dish that is easy, tasty and glamorous. Plus, you can cook it even 8 hours before dinner or lunch. I found this recipe in a greek magazine called "Kitchen & Quality of Life".
Pork Tenderloin with Prunes
Ingredients
2 kilos Pork Tenderloins
2 garlic gloves
350 gr. prunes without pip
Juice of 1 orange
1 1/2 cup dry white wine
salt
pepper
1/4 cup olive oil
1 cup hot water
Instructions
Cut the tenderloin in pieces 2 cm thick, salt and pepper them. In a pot heat the olive oil and sautee pork until it becomes golden. You add the orange juice and 1 cup hot water. You boil for 45 minutes in low heat. In the meantime, you soak the prunes into the wine. You throw the prunes and wine in the pot, season with salt and pepper and boil for another one hour. If the sauce is runny, you thicken it with 1 hipping tsp corn flour dissolved in 2 tbsp water. You can serve it with rice as I did or pasta or mashed potatoes. You can make this dish with chicken or game as well. At this point, I would like to send my wishes to all of you who follow my posts for Happy Christmas.
