
As I told you, during this weekend I had plenty of time, because of the snow that held us inside. So, I decided to make a cake as well. I found this recipe two years ago in a greek site by
Stelios Togias. I have baked many cakes in my life and I can tell you this; this is the best cake I have ever made. It is fluffy and moist. It is not a bundt cake. If you do not like your cake to be fluffy, do not make it. I like it a lot. It is so light in its texture that you must eat at least two pieces to realize you have eaten a cake. So, let's go make it.
Preheat oven to 180C. Butter and flour either one big or two smaller baking pans. I put the batter in two. Melt chocolate with the hot water. Whisk until fully dissolved. Divide the egg yolks from the whites. In the mixer we mix the sugar with the margarine until it becomes pale and fluffy. We add the egg yolks. We put the mixer to slow and we throw the chocolate and the vanilla extract. We add alternately the flour-soda- salt mixture and the milk. We whisk the whites to become meringue. We add the meringue to the batter and we mix gently. We throw the mixture to the pan or pans and bake for 40 to 45 minutes depending on the oven.
