Mexican Salad

Yesterday, officially started the greek Orthodox lent for Easter. This lent lasts until Saturday before Easter Sunday, that is 40 days. All greek Orthodox, even those who do not fasten, celebrate this Clean Monday, as we call it, and fasten at least this day. I do not fasten, at least not until the week before Easter Sunday. Nevertheless, this Monday I follow the custom and abstain from meat and dairies. Yesterday my mother invited some friends and cooked many things. I offered to make this salad and everyone liked very much. So, I decided to post it. In the next days, I am going to show you what my mother cooked and try to get the recipes as well for you.
Mexican Salad

Ingredients
For the salad
1 can red kidney beans
1 1/2 any type of beans boiled
1 jar florina peppers about 5 pieces (you can use red bell peppers only you have to bake them in the oven until very soft) cut in small pieces
4 small cucumbers cut in small chunks
1 handful raisins
15 kalamata olives cut in chunks
1 can corn
6 sour small cucumbers (toursi as we call it here in Greece)

For the sauce
1/2 cup olive oil
1/4 cup balsamico vinegar
3 tbsp mustard
3 tbsp honey

Instructions
For the salad
Put everything in a bowl and mix until incorporated. Salt it and put it aside.
For the sauce
Put all ingredients in blender and mix. Put in the fridge for at least an hour.
It is a very easy salad. The only tiring thing about it is to cut all these things in small pieces. From then on it's nothing.
