This is the third dish of the Greek intervention between my culinary discoveries around the world. All three recipes are dishes we make very often at home and they are tested and true. This one is my son’s favorite and I am very happy for it. You can accompany it with a large piece of feta cheese and warm bread. It is delicious.
Arakas Laderos(Peas in Tomato Sauce)
Ingredients
450 gr. frozen peas, thawed and rinsed
1 cup water
1 cup tomato juice
¼ cup olive oil
3 tbsp olive oil
1 onion chopped
¼ tsp ground cinnamon
¼ tsp ground nutmeg
1 tbsp sugar
A small bunch of fresh dill, finely chopped
Salt and pepper to your liking
Instructions
In a pot put the 3 tbsp of olive oil and place it on medium-high heat. Add the onion and sauté for couple of minutes. Add the peas and continue to sauté for another couple of minutes. Add the water, cinnamon, nutmeg and dill, lower the heat to medium and let it boil for 3 quarters of an hour. Add the tomato juice and sugar and stir. Let it cook for another half hour. Add the ¼ cup of olive oil let it boil for 5 minutes and lastly add the salt.
The reason why we do not add the tomato juice and salt from the beginning of the cooking is because, if we add them, then the peas will become stiff and will never cook to become soft. Also I prefer to put the olive oil just before the end, because in this way the dish becomes lighter and the aroma of the oil is more vivid in the dish.
