Many of my Greek friends who follow the blog are asking me why wasn’t I posting Greek recipes. The truth is that I have been eating Greek food my entire life. I just want to explore other countries, other flavors, other types of food. Don’t get me wrong, I do like Greek food and I consider it one of the best diets in the world. It’s just too familiar to me. I want to try new things, that’s how human nature works after all. Anyway, having said that, I decided to post a Greek dish, which is Kotopoulo Lemonato or Lemony Chicken. This is my version. We like it a lot, it is very easy and we eat it very often. This particular one is a pot Lemony Chicken. Here in Greece we cook it also in the oven. Another time I will make it this way. Both ways are easy and the final result is excellent. It is a light meal, does not involve any cream or fats. I am sure your family will love it.
Kotopoulo Lemonato(Lemony Chicken)
Ingredients
700 gr. chicken breasts fillet
4 tbsp olive oil
1 onion cut in rings
1 garlic clove, chopped
1 green bell pepper cut in strips
1 can mushrooms (you can use fresh approximately 350 gr.), either chopped or whole
¼ cup dry white wine
1 ¼ cups water
Small bunch of parsley chopped
¼ cup dried basil
¼ cup dried oregano
Salt and pepper to taste
3 tbsp corn flour dissolved in 3 tbsp water
1/8 cup lemon juice (or the juice of half a lemon)
Instructions
Cut the chicken in pieces (you can leave the fillets as they are, it does not matter).
In a pot put the olive oil and heat at medium-high heat. Add the onion rings, garlic and peppers and sauté for 5 minutes. Add the chicken pieces and sauté for another 5 minutes. Pour the wine and let evaporate until it stays half. Add the water and all the herbs except the parsley, plus salt and pepper and simmer for ½ an hour. Add the lemon juice and parsley and continue to simmer for another half hour.
The sauce is going to be runny, so just add the dissolved corn flour and let it thicken. You can serve with rice, orzo or in my case with basmati. I love the taste and aroma of basmati.
