Quick Meals Part 3: Balsamic Chicken Drumettes

My son is a very picky child. He could eat pasta Bolognese for ever. He does not appreciate my culinary endeavors whatsoever. Every time I make something new, extraordinary and tasty, he just takes his tongue out with disgust.
One of the very few, very few I repeat meals he loved from the very first moment is the teriyaki drumettes and any drumettes that taste similar to those. So, the other day as I was searching something to make for lunch and didn’t want to cook two meals I bumped up at this recipe by Giada De Laurentis in Food Network. I liked the combination of flavors and after making some small changes, I gave it a try. It was very good. This is a keeper. My son ate his drumettes up to the bone. After finishing his lunch he had a big smile in his face and the mouth of a clown. The thick sauce has coated the area around his mouth and looked very funny. So, I guess I can call this recipe a big success. So here it is.

Balsamic Chicken Drumettes

Ingredients
12 chicken drumettes
½ cup balsamic vinegar
½ cup honey
½ cup brown sugar (I used Demerara)
¼ cup soy sauce
¼ tsp ginger
¼ tsp poultry seasoning
3 garlic cloves, halved

Instructions
Combine all ingredients in a bowl. Place the drumettes in glass container or in a re-sealable plastic bag. Throw all the ingredients in the drumettes and let marinate for at least two hours.
Turn on the broiler.
Place the drumettes on a pan covered with parchment paper. Broil until they take a dark brown color.
In the meantime, put the garlic cloves in the blender along with some of the marinate and blend them. Now in a pot place the marinate along with the garlic paste. Bring to boil and then lower heat and let simmer for half an hour. If it hasn’t thicken by then, just add 1 tbsp of corn flour dissolved in 1 tbsp of water. I served it with basmati rice you can serve with whatever your heart desires.

Just a small note: My Italian teacher called me and she was very touched by the post. She also told me that I should mention that she is still married to a Greek so as to avoid any misunderstandings. She is right, so I make the correction. She was and still is married to a fine Greek gentleman and has two kids around my age. Truth has revealed.
