Poached Salmon Teriyaki

I was browsing my recipes and I realized that although I have posted recipes for seafood, I have never made fish. The reasons are first because neither I nor my husband eats a lot of fish and secondly when we do, I rely on my mother who lives next door to do all the dirty work lol.
But since we are on a diet and fish sure is appropriate for diets, I decided to buy some fresh salmon and cook it. A month ago I participated in a cooking seminar held by Vagelis Driskas and there he taught us among other things how to poach a fish. Vagelis Driskas is a very well known Greek chef who has written many books and has earned several awards for them. So, I thought that would be the chance to implement what I’ve learnt in that seminar and just add my own touch as well.

I made the salmon and it was delicious. It was the first time I ate it with teriyaki sauce and I can verify that it was excellent. I served it with broccoli and even my picky son ate not only the fish, that I could understand because he likes it, but he ate even his portion of broccoli. Who would have thought?
Anyway, overall I think it was a great light meal and it is so easy and quick you can prepare it even during weekdays! So, without further ado let’s jump to my kitchen and show you how I did this!

Poached Salmon Teriyaki

Ingredients
For Poaching the Fish
800 gr. fresh salmon fillet
500 ml dry white wine
500 ml water
2 tbsp cider vinegar
¼ tsp green pepper
2 bay leaves
2 garlic cloves
Parsley
¼ tsp salt

Teriyaki Sauce
½ cup soy sauce
½ cup mirin
4 tbsp brown sugar

Instructions
For Poaching the Fish
To poach the salmon we put in a pot all the ingredients except the salmon.
Put fire to high. When they start to boil we reduce the heat to medium. We don’t want the water to boil, just simmer.
Add the salmon and let cook for about 15 minutes or when the temperature inside the fish arrives to 55° C. Take the fish out and let drain.

For the Teriyaki
While the fish is poached, you can make the teriyaki sauce by adding all the ingredients to a small pot and bring to boil.
Reduce heat and let simmer until the sauce starts to thicken.
Serve the salmon with the sauce and steamed broccoli as I did or rice or noodles. The choice is completely up to you!
