Smoked Salmon Pasta

Today I am going to tell you a little bit about my husband and I will explain also why. I met my husband about 10 years ago in a very difficult period of mine. From the first moment he stood right next to me and helped me overcome the difficulties I was facing. When we started dating, I immediately realized that this person was my other half. He was the first person with which I had so many things in common. So, we started living together and eventually we got married and had our son.
He is the person on whom I can count and he always helps me when I face a crisis, because he is very calm and logical, whereas I tend to be more impulsive. He usually asks very little for himself and is ready to give everything that he has.

Currently he helps me redesign my blog, as he has the background for this. He spends a lot of time trying to make me happy and this is something I really appreciate.
For this reason the other day, I decided to make one of his favorite meals which is Smoked Salmon Pasta. I know that he likes this type of pasta very much and he always orders it, when we go to an Italian restaurant. I found a recipe here and after several changes, I cooked this dish which was perfect.
All three of us kept returning to the pot with the pasta for a refill, until we were all stuffed up to our ears. Even my picky son liked it and ate one and a half portions, can you believe it? So, this is the recipe and again I would like with this post to thank him for everything he has, he is and he will do for our family.

Smoked Salmon Pasta
Ingredients
1 tbsp olive oil
1 onion, chopped
1 cup vegetable stock
1 cup white wine
1 ½ tbsp scotch
100 gr. smoked salmon, cut in chunks
1 cup light cream
¼ cup parmesan
Chopped parsley

Instructions
Cook pasta according to your liking. Preferably cook it al dente because it is going to be cooked again when you will pour it in the sauce.
In a skillet pour the olive oil and in medium heat sauté the onion.
Add the wine, the stock and the scotch and cook on medium/low heat for about 10 minutes. Add the salmon and cook for another 5 minutes.
Lower heat to low and add the cream, the parmesan and the parsley. Let simmer for couple of minutes, add the pasta and toss. Serve immediately.
